The task of the day:

Smoking Sausages

Today we cooked off all of the sausages and meat that we have been making for the week, except for those that need to be cooked right before eating.

In the end, we have made:

  • Hot Dogs
  • Country Style Pâté
  • Italian Sausage with Peppers
  • Smoked Salmon
  • Smoked Scallops
  • Smoked Pork
  • Smoked Beef
  • Spanish Chorizo
  • Breakfast Sausage

We also made two salsa/chutneys to go with the sausages. A Smoked Corn and Mushroom Relish, and a Dried Fruit Chutney. Both were pretty easy to finish.

Tomorrow, is cooking and plating for a buffet. We'll be in the kitchen starting right from 2 in the afternoon, with no lecture. This should be pretty cool.
